Wholewheat Blueberry Flax Pancakes-Dairy Free

I wanted to serve up something extra special for my wife Jenny on our anniversary so I made up some extra delicious Blueberry Wholewheat Flax Pancakes.  These have became a real house hold hit in our family over the last couple of months.  The pancakes are quite easy to make and you can adjust the recipe in many ways.  Ours are non dairy since our daughter Jorja can not  have any so I used Almond milk instead.

Also I hope you all like my creativity when it comes to the design, lol!!  The first is an attempt at a heart for Jenny.  The second is the letter "A" for my oldest daughter Ava.  Why not have fun while making your meals, include your children in making simple recipes too.



Wholewheat Blueberry Flax Pancakes

1 1/3 Cups of Wholewheat Flour
3 tsp  Baking Powder
1/2 tsp Salt
3 tbsp of Sugar
2 tbsp of Ground Flax

1 1/4 Cups of Almond Milk (or any other milk)
1 Egg Beaten
3 Tbsp of Vegetable/Canola Oil, Margarine, or Butter
1/4 tsp Vanilla

1/2 Cup of Blueberries

Directions

  1. Mix all of the dry ingredients
  2. Mix all the wet ingredients
  3. Add the wet ingredients to dry
  4. Then add whatever fruit you like.  I added blueberries but raspberries, strawberries and many other fruits would be great choices
  5. Grease a pan and warm to medium heat prior to adding mix.  You can always add a small amount to ensure that it has reached ideal temperature
  6. When adding the mix to the pan add whatever amount you want!  If you want large pancakes add lots, small add little.  In my house we like them large so I probably add about 1/3 Cup per a pancake.
  7. Cook until they are golden and the pancake is bubbling.  Flip and cook the other side until golden.
There you have it.  Simple daddy friendly delicious and healthy pancakes.
