Wife Impresser- Home Made Sweet Potato Cake

So I had a few sweet potato's kicking around and I wanted to try something a little different.  Really hadn't tried making a cake yet so why not give it a try.  Seeming how good the sweet potato pancakes turned out these surely would have to be delicious.

As you will begin to notice I have become a huge fan of using spelt flour for most of my baking.  A couple of the reasons why are that it is an ancient grain and there for has higher nutritional value and secondly our bodies break it down much better than standard flours.  Also you can add Flax Meal and Chia seeds to almost all baking recipes and only make it better.  This way I feel a lot less guilty eating sweets.

So here it is and by the way it was a huge hit with the children.  If you have kids they will love it.  This cake is  moist and remained that way even after a couple of days.  Dads make this one for the wife and children and they will be impressed.  Oh yeah best part is it uses beer, an excuse to have an early morning drink!


Ingredients

1 Cup of Blue Agave Syrup or 1 3/4 Cup of Brown Sugar  (I used the agave to make it sugar free)
3/4 Cups of Vegetable Oil
3 Eggs
1 Teaspoon Vanilla Extract
2 Cups of Cooked Mashed Sweet Potato
2 Cups of Spelt Flour
3 teaspoons of baking powder
2 teaspoons of baking soda
1/4 teaspoon of salt
2 table spoons of flax meal (optional)
2 table spoons of chia seeds (optional)
2 teaspoons of ground cinnamon 
1/2 Cup of Beer (I used Sleeman's Clear)

Directions

  1. Grease a 9x13 baking dish preferably using Coconut Oil.  Preheat oven to 350 Degrees Fahrenheit.
  2. Mix all the wet ingredients ensuring the eggs get beaten in one bowl minus the beer.  In another bowl mix all the dry ingredients. Stir in the wet ingredients one cup at a time into the dry adding the beer each time.  Spread the batter in the pan.
  3. Place the pan in the preheated oven and bake for 35 minutes or until a knife placed in the center of the cake comes out clean.  Once cooled either add icing or serve.  Watch for my upcoming dairy free icing.  Just made it and the girls wore it all over their face.
Enjoy the cake.  Keep on cooking, and remember when you make your food at home you can usually pronounce all the ingredients:)
